There’s a common misconception in our society that we need to eat protein at every single meal. I beg to differ. Protein in one or two meals a day is plenty in my book. In fact, the American society is the only one I know of that makes dinner the heaviest meal of the day – everyone else eats heaviest at lunch so that they have the rest of the day to digest. Why didn’t we adapt that? Who knows – but what I do know is that not every dinner meal needs to be protein packed. Here’s an example of an easy peasy dinner recipe that came together because it was all we had in the fridge.
In the photo above there’s:
Steamed sweet potato
Sautéed mushrooms and onions
Sautéed kale
Miso tahini sauce on the side
Raw sauerkraut brand: Real Pickles
Sautéed mushrooms & onions:
1 yellow onion
1 package baby bello mushrooms
1 tsp coconut oil
½ tsp coconut aminos
½ tsp toasted sesame oil
Slice half an onion then put into in a hot pan with coconut oil and sauté until it’s soft. Wipe your mushrooms clean from any dirt and take off the stems. Then chop into pieces and put into pan with the onions. Let them cook together for about 5 minutes, then add the coconut aminos and sesame oil and serve.
Miso tahini sauce:
1 heaping tablespoon organic tahini
1 heaping tablespoon sweet white miso (I like the brand: Miso Master)
¼ cup warm or hot water
Mix together until it’s smooth and all combined. Use this sauce to dip your veggies, pour over kale or dip raw carrots, chips, etc.
Sautéed kale:
1 head of kale
1 or 2 garlic cloves
1 tablespoon coconut or olive oil
Wash and chop the kale removing the stems. Sautee the garlic in the oil first then add the kale and let cook for 10 minutes. Check that it’s the softness that you prefer. Drizzle with tahini sauce for a delicious meal!
