Last week for Rosh Hashanah I made a mixed berry tart from Terry Walters book Clean Food. I promised to give you the recipe so here it is:

Crust:
1 ½ cups teff flour
¼ teaspoon sea salt
1/2 cup maple syrup
¼ cup grapeseed oil

Filling:
5 cups fresh or frozen mixed berries
1 ½ cups clear apple juice
2 tablespoons maple syrup
1 tablespoon agar powder
2 tablespoons arrowroot
1 teaspoon vanilla extract

Preparing crust:
Preheat oven to 350 degrees F. Place flour, salt, syrup and oil in food processor and pulse to combine. Pour mixture into 9-inch oiled tart pan. Press down to form crust. Pierce several times with fork and bake 15 minutes until lightly browned. Remove from oven and set aside on wire rack to cool.

Assembling tart:
Fill tart with berries. In medium pot over medium-high heat, combine apple juice, syrup and agar. Whisk continuously until agar dissolves. Slowly sprinkle in arrowroot and continue whisking until mixture thickens and no clumps remain. Add vanilla, remove from heat and set aside to cool for 5 minutes. Spoon evenly over tart and refrigerate 1 hour or until set.

This was really delicious and everyone really enjoyed it!

Last night I had the honor of attending a cooking class at the Natural Gourmet Institute. It was a gluten free and vegan baking class – right up my alley!! The space was beautiful and it was SO much fun.

If you take one of their classes that are targeted for certain people with allergies, you are bound to meet people who have similar interests like you. Yes, that was the case here and I met some really nice women who all spoke my same health conscious language – it was fantastic!

It’s not everyday you spend 4+ hours talking about different flour combinations, types of sugar and so on… It was a really great experience.

I recommend you search through their public class catalog and get yourself to a class. It seems as though most people who attend their classes are quite health conscious, ready to learn something new and really excited to actually be there!

Give yourself a gift of taking a class there, you definitely won’t be disappointed. It really is a special place; Annemarie Colbin must be SO happy- her dream is definitely a success.

Dear friends,

It’s been an exciting few weeks! My gluten free, vegan, baking adventure is quickly taking off. My new name is The Lovely You Bakeshop. We’re working hard on getting our samples out to lots of different people and stores to see everyone’s reactions. We’ve had very good responses so far and are continuing the process to see where this takes us.

We tackled our neighborhood of the upper west side today and it was a lot of work but we met some really great people who gave us lots of advice. Stay tuned to see where our brand winds up. If there’s a store or café that you feel we would be a good fit for then please let us know, we’d love to talk or send samples.

You wouldn’t believe what I’ve been working on… my own gluten free, vegan, no refined sugar muffins! I’m creating my own brand! YES you heard me… finally after all those thoughts of creating something on my own I’m actually making it happen. Let me introduce you to:

I am creating a logo as we speak and am getting very excited about this amazing new market that I’m about to dive into.

Of course there are some kinks to work out, like how to get my muffin papers to stop sticking to the delicious muffins! I’ll figure it out, although if anyone has any suggestions for me I’d greatly appreciate them. I may just decide to do away with the papers and simplify the whole situation!

My IIN (Integrative Institute of Nutrition) friends are hosting an event next Saturday, June 26 where I will be having one on one yoga alignment sessions as well as selling my newly branded Lovely You muffins.
