We’ve finally figured out a healthy, easy, homemade and delicious snack – chia pudding. Have you tried it? It’s SO easy. You can add any topping of your choice. Here are some of my favorites:
Blueberries
Blackberries
Goji berries
Cacao nibs
Cinnamon
Unsweetened shredded coconut
Honey
Recipe:
¼ cup organic chia seeds
1 ½ cups organic coconut milk (carton or in the can – just make sure to stir the can well to combine the cream and water)
½ teaspoon vanilla extract
Mix well and let it sit covered in the fridge for 2-3 hours. Stir at least once. Add the toppings of your choice and enjoy!
