Homemade paleo granola

Chad loves the paleo diet. He likes how it makes him feel and that he’s been able to lose a significant amount of weight on it. He purchased a paleo granola and this is my attempt at re-creating it. It really is delicious – if I do say so myself! For those with IBD, if you’re in a flare up then don’t eat this since the small nuts and seeds won’t do well with your colon. Otherwise, everyone should chew well and enjoy!

All organic ingredients:

1 cup raw pumpkin seeds

3 cups raw almonds, chopped or smashed into small pieces

1 cup unsweetened coconut flakes

1 cup un-salted sunflower seeds

1 cup currants

1/2 teaspoon vanilla extract

pinch of sea salt

1/3 cup coconut oil

2 teaspoons honey

2 teaspoons maple syrup

Preheat oven to 350

Heat the coconut oil, honey, maple syrup and vanilla in a small pan on the stove. Smash the almonds so they are in small pieces then combine the pumpkin seeds, coconut flakes, sunflower seeds, currants and sea salt on a baking sheet. Combine the wet ingredients and mix well. Spread the mixture out on the baking pan and bake in the oven for 15-20 minutes. Mix it up after 10 minutes in the oven. Check often to make sure it’s not burning. Remove when the mixture gets nice and toasted brown. If it needs extra time then leave it in for 5 minute increments – be careful not to let it burn.
